
Festive Roast Chicken Herb Stuffing
Not every holiday gathering needs a 20-pound turkey. A perfectly roasted chicken is elegant, manageable, and incredibly delicious. Rubbed with herb butter and filled with savory stuffing, this bird is golden-brown proof that great things come in smaller packages.

Ingredients
1 (4-5 lb) roasting chicken
2 tbsp olive oil
Salt and pepper
Herb Butter: ¼ cup butter, rosemary, thyme, garlic.
Stuffing: 4 cups bread cubes, onion, celery, broth, egg, herbs.
Instructions
Stuff: Sauté onion and celery, mix with bread and herbs, and stuff the bird (or bake alongside).
Butter: Mix herb butter ingredients and rub under the skin of the chicken. Rub skin with olive oil, salt, and pepper.
Roast: 375°F (190°C) for about 1 hour 15 mins (until internal temp hits 165°F). Rest for 15 minutes before carving.
